Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.
Sorry, sometimes we just need some REGULAR conversation.......or at least THIS caregiver does.
I keep telling myself that I should eat what I serve. *meeps* I'm a bad, bad, BAD girl when it comes to food. *avoids the mirror* uhhuh.
And my supper was Subway .. highest in protein, nearly the lowest in carbs: the meatball sub. Yum.
Emjo .. don't know if you've tried one yet, but The Bullet is a great, albeit small, juicer/blender/pulverizer. We used it to great success for making pureed meals when we needed it.
meanwhile back on planet bunker the renter hor gave me a quart of greek yogurt. it tasted like soured mop water till i hit it with my sweetened rice, added a little xtra sugar and dam, the rice came to life..
Captain, Subway sandwiches were one meal that Coy would eat twice a day all week if I served them. He always had chicken or turkey in whatever specialty sandwich they were promoting. A few times a year would be enough for me, but I saw to it he got one fairly frequently.
I just got a call from my daughter/boarder that she would be late for dinner. All of the cook's assistants at the ALF where she works called in sick, so she is staying late to help out. When she gets here we'll have porterhouse steak, asparagus, and baked potato with sour cream and bacon. I need a special treat and something easy after taking care of Mom all weekend.
watch the sodium in those prepared meals alison. it can be astoundingly high sometimes.

If I hadn't just had roasted red (bell) pepper hummus and sun-dried tomato pesto with cheesy crackers, I'd be hungry now for that. MMMhmmm.
We try to do a salad meal once a week. Sunday we had mixed greens with steak strips, two kinds of cheese, hard cooked egg wedges, radishes, pomegranate seeds, red grapes, parsley, green onions, carrot slices, and celery. (I forgot to add the walnuts I'd intended.) On salad nights we each eat out of a medium serving bowl!

So I flipped a couple of days. No crime, right? This is my weekend to host my mom and I couldn't leave her to shop for the ingredient I discovered I was missing for taco squares. Instead I made potato pancakes with maple syrup, applesauce, and crisp bacon. She loves that. Lemon bars for dessert.
I don't know if there is a difference between latkes and potato pancakes. Most recipes look the same to me, but the latkes I get from my favorite deli seem thicker than my pancakes.
Taco squares tomorrow ...
